This is a great time to book a party or special event. You can make any gathering extraordinary by adding some of our incredible, ready to serve dishes. ROSH HASHANAH MENU

RECIPE: Stuffed Shells with Butternut Squash, Spinach, and Ricotta

This is a delicious recipe and a good way to use all the fresh sage that is growing. We have so much sage in our garden, this would have to be ordered by 700 people. That's a lot of sage and brown butter. Hope you try this tasty fall dish.

Ingredients

• 2 cups of Ricotta.
• ⅓ cup Parmesan Cheese, plus more for Garnish.
• 1 Fresh Smashed Garlic Clove.
• ¼ cup Frozen Chopped Spinach (squeezed and drained).
• 1 Egg.
• Salt, Pepper.
• Roasted Squash, around 2 cups.
• Grated Lemon peel.
• 1 Stick of Butter.
• 10 Sage Leaves.
• Fresh Lemon Juice.

Directions

Peel, chop and toss your butternut squash in oil. Then roast at 425F for 15-20 minutes. It should be about 2 cups roasted.

Cook your jumbo pasta shells according to directions.

In a separate bowl, add:

  • approx. 2 cups of ricotta.

  • 1/3 cup parmesan cheese.

  • 1 fresh smashed garlic clove.

  • 1/2 cup chopped blanched spinach.

  • 1 egg.

  • salt, pepper.

  • your prepared roasted squash.

  • grated lemon zest.

Stuff the shells with the mixture and place in a buttered baking dish.

Place your shells in a 400F oven until heated through, around 20-25 minutes.

Sage Brown Butter Sauce:

  • Melt ½ cup butter in a sauté pan until golden brown and bubbly.

  • Add at least 10 sage leaves until slightly crisp.

  • Turn off heat and squeeze in fresh lemon juice.
     

When finished, spoon your warm sage sauce all over the stuffed shells and sprinkle with grated Parmesan.
